Autumn Roasted Sausage with Sweet Potatoes and Apples

Ingredients:
12 oz Smoked Turkey Sausage or Kielbasa, sliced into 1/3-inch slices 16 oz Sweet Potatoes, peeled and diced 16 oz Brussels Sprouts, halved 1/2 medium red onion, diced 3 whole garlic, minced (about 1 Tbl) 1/4 cup Olive Oil 1 Tbl Fresh Sage, chopped 1 Tbl Fresh Rosemary Salt & Pepper to taste 2 Jonagold apples, cored and diced into 1-inch chunks 2 Tbl Fresh Parsley, chopped
Instructions:
- Preheat oven to 400° F. Spray a rimmed 18 x 13-inch baking sheet with non-stick cooking spray. 
- Add sausage, sweet potatoes, brussels sprouts, apples, onion and garlic to sheet pan. 
- Drizzle with olive oil, sprinkle with sage and rosemary and season with salt and pepper. Toss and coat. 
- Roast in preheated oven 15 minutes and then remove and toss again. 
- Return to oven and continue to roast until vegetables and apples are tender, about 15 minutes. 
- Sprinkle with parsley and serve warm.
