Autumn Roasted Sausage with Sweet Potatoes and Apples
12 oz Smoked Turkey Sausage or Kielbasa, sliced into 1/3-inch slices 16 oz Sweet Potatoes, peeled and diced 16 oz Brussels Sprouts, halved 1/2 medium red onion, diced 3 whole garlic, minced (about 1 Tbl) 1/4 cup Olive Oil 1 Tbl Fresh Sage, chopped 1 Tbl Fresh Rosemary Salt & Pepper to taste 2 Jonagold apples, cored and diced into 1-inch chunks 2 Tbl Fresh Parsley, chopped
Preheat oven to 400° F. Spray a rimmed 18 x 13-inch baking sheet with non-stick cooking spray.
Add sausage, sweet potatoes, brussels sprouts, apples, onion and garlic to sheet pan.
Drizzle with olive oil, sprinkle with sage and rosemary and season with salt and pepper. Toss and coat.
Roast in preheated oven 15 minutes and then remove and toss again.
Return to oven and continue to roast until vegetables and apples are tender, about 15 minutes.
Sprinkle with parsley and serve warm.
